Limited Edition Birch Syrup

An exclusive, barrel-aged (single-barrel) birch syrup crafted from birch sap harvested just before the buds begin to burst. In this fleeting moment of nature, the sap reaches its most intense and concentrated flavour.Through a long, slow reduction process, it transforms into a dark, complex syrup with notes of caramel, prunes, dates and blackcurrant jam, balanced by a delicate tamarind acidity. It takes 200 litres of birch sap to produce just 1 litre of this syrup.
